Baseball Banana Bars. One of the things I have learned over the years with reflux friendly cooking is to keep the recipe as simple as possible. These bars are moist and delicious and will travel well to the next game.

Ingredients:

1/2 cup butter

2 cups sugar

3 eggs

3 mashed ripe bananas

1 tsp. gluten free vanilla

2 cups flour (oat flour will also work well)

1 tsp. baking soda

1/2 tsp. salt

Directions:

In a mixing bowl, cream together the butter and sugar. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt and mix well into the creamed mixture. Pour into a greased 9"x 13" baking pan. Bake at 350 degrees for 25 minutes or until a toothpick comes out clean.
