Chicken and Mushroom Pasta. My oldest son begins football practice tomorrow. This dish is easy on the stomach but will still give him the fuel he needs for an intense workout.
8 ounces dried penne pasta
12 ounces boneless chicken breasts, cut into bite-size strips
1/4 tsp. salt
1/8 tsp. pepper
2 Tbs. olive oil
1 clove garlic, minced
3 cups sliced fresh mushrooms
1 Tbs. onion, thinly sliced
1/2 cup chicken broth
1/4 cup dry white wine (if tolerated)
1/4 cup shredded fresh basil
1/4 cup shredded Parmesan cheese
Cook pasta in boiling, lightly salted water according to package directions; drain. Return pasta to saucepan; keep warm. Meanwhile, sprinkle chicken with salt and pepper. In a large skillet heat 1 Tbs. of the oil over medium heat. Add the chicken and garlic. Cook and stir for 3 - 4 minutes. Remove from skillet and keep warm. Add the remaining olive oil to the skillet. Add the mushrooms and onion; cook just until tender, stirring occasionally. Add the chicken broth and white wine. Bring to a boil and then reduce heat. Cook uncovered about 2 minutes until the liquid is reduced by half. Remove from heat. Add the cooked pasta, chicken, and basil to the mushroom mixture. Toss gently to combine. Sprinkle with Parmesan cheese and serve.
