Reflux Friendly Cooking: Coconut Apple Muffins

Coconut Apple Muffins. These muffins are moist and chewy and make a great breakfast or soup accompaniment.
They are also gluten-free and dairy-free.


1 1/2 cups oat flour

1 1/2 tsp. baking powder

3/4 tsp. salt

1/2 tsp. nutmeg (if not tolerated use ground ginger)

1/4 tsp. baking soda

2 eggs

3/4 cup granulated sugar

1/3 cup vegetable oil

3 tablespoons coconut milk

1 cup peeled and diced apples

1 cup chopped walnuts

3/4 cup flaked coconut


Combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in the apples, nuts and coconut. Stir the wet ingredients into the dry ingredients just until moistened. Fill muffin cups 3/4 full. Bake at 350 degrees for 20 - 25 minutes or until a toothpick comes out clean.
