Dreamy Summer Dessert.
This cool recipe is gluten-free, dairy-free and low in acid. At less than 200 calories per serving, it will help you kick off the summer season in style!
4 large bananas, peeled and frozen
1/3 cup almond milk
2 Tbs. finely shredded coconut (both unsweetened and sweetened will work)
2 Tbs. creamy peanut butter
1 tsp. vanilla extract
1/4 cup chopped walnuts
1/4 cup raisins
Place the bananas, milk, coconut, peanut butter and vanilla in a food processor; cover and process until blended. Transfer the mixture to a freezer container and stir in the walnuts and raisins. Freeze for 4 hours before serving. Scoop out with an ice cream scoop.
