St. Patrick’s Green Smoothie. St. Patrick’s Day has come to be associated with everything Irish, especially anything green and lucky. Here’s hoping this green drink will bring you good health and good luck.
1 frozen banana
1 cup coconut milk
1 cup spinach
1/2 cup frozen mango pieces
1/4 of an avocado, peeled
1 tsp. lime juice
Peel a banana, place it is a plastic freezer bag and place it in the freezer until it is frozen solid (about six hours). In a blender, mix the coconut milk, spinach, mango, avocado, lime juice and the frozen banana. Blend on medium about 30 seconds (until the spinach pieces are very small). Pour into a festive glass and enjoy!
