Reflux Friendly Cooking: Yummy Shrimp and Rice

Yummy Shrimp and Rice.

There are a lot of ways to eat shrimp and rice, but this one-skillet-wonder is reflux-friendly, really packs in the nutrients and tastes great. Let's just say there were no leftovers!


1 Tbs olive oil

1/2 onion, chopped

1 1/2 Tbs fresh grated ginger

1 clove garlic, finely chopped

2 bags instant rice

1 lb medium peeled and deveined shrimp (frozen and thawed works fine)

1 cup frozen peas (thawed)

2 cups fresh baby spinach

salt and pepper to taste


Heat the oil in the large skillet over medium heat. Add the onion and season with salt and pepper. Cook until tender, about 6 minutes. Add the ginger and garlic and cook, stirring another 2 minutes. Add the rice and stir to coat in the onion mixture. Stir in 2 cups of water (or until the rice is covered) and bring to a boil. Reduce the heat and simmer, covered for about 10 minutes. Fold in the shrimp, peas, and spinach and cook, about 5 more minutes until the shrimp is pink and the spinach is wilted. Gently toss the mixture. Add another pinch of salt and pepper to taste. Serve warm and enjoy.
