Turkey Sausage and Noodles

Fall sports are in full swing in my house, so everyone seems especially hungry. Sometimes it can be challenging to find something that is hearty, but not too heavy for those with sensitive stomachs. This dish just might fit the bill.

2 cups uncooked egg noodles (rice pasta also works great)

2 lbs. turkey sausage cut into 1 inch slices

1/2 onion, chopped

2 medium carrots, sliced

1/2 cup all-purpose flour

2 1/2 cups milk (rice milk or soy milk will work also)

2 Tbs. Worcestershire sauce

Cook noodles according to package directions. In a large skillet, cook the sausage, onion, and carrot over medium heat until the sausage is cooked through. Stir in the flour until blended. Gradually add the milk. Bring to a boil and stir until thickened (about 2 minutes).

Drain and add the noodles to the skillet. Add the Worcestershire sauce. Gently toss. Transfer to a greased baking dish and cover and bake at 350 degrees for 25 minutes, uncovering for the last 10 minutes. Serve warm.
